The Ups & Downs

March is said to come in like a lion and go out like a lamb. Well, if that is so, I would like to see the lamb please, and I don't mean meteorologically. What exactly do I mean? Well, many of you know I have been on the never ending hunt for a job that will suit my current fiscal needs. I am thankful for the job I have currently, but if I am to move on with my life's plans, there will need to be a significant change in personal income. For this reason, I started applying for teaching jobs back in Texas. Twice now, I have been presented with what I have thought were good teaching opportunities. The latest one was such a sure thing, that I almost rented the moving truck and started calling the rental agency that manages my house and told them, take the house off the market. It's a good thing I didn't because said job was given to someone who had lost her position within the same district and had to be given the job due to contractual obligations. Creative with Food

Another way I want to be creative is with the food I prepare for my kids. For years I fed my kids to keep them fed with no mind to what how interesting it was. Convenience was key because of our hectic schedules. I began missing when I would cook creatively, so I am looking to add that spark back into my food while keeping meals simple. A few weeks ago, I used Betty Crocker's pizza dough mix to make pizza with the kids, but something went wrong and it was too crispy, the reduced fat pepperoni dried up and in the end no one was happy. I had bought two packages of the dough mix and only used one, and since the first go round didn't work, I had to get creative. I mixed the dough as the package directed, split the dough into four balls and then spread the balls into circles about 5-6 inches across. I spooned some pizza sauce onto the dough, keeping it away from the edges and then added the cheese and pepperoni. I folded over the dough and sealed it with a fork and brushed it with a...

We made pizzas this week. My blog friend Hilde Iren posted on Facebook that she was enjoying her Saturday and that she would be making pizza. It made me want to make pizzas, too. So when Caitlin and I came home from dance practice, we stopped at the grocery store for pizza fixings. The kids had a nice time making dinner. James doesn't care for cheese decided that he didn't want to have any on his part of the pizza. It made the final result look funny, but he ate it and that's the important part. Now if I can just get him to like some veggies. I, on the other hand, had a veggie pizza. I also limited the amount of cheese that went on my pizza. James helped make mine, too. The kids' pizza went in first. It was only after I was putting mine in the oven that I realized that Caitlin had only put the temperature up to 400°F instead of 425°F. Savory Sightseeing

When I began planning my trip to Norway, I scoured the travel books, explored the internet and drilled my Norwegian acquaintances about the many things we would see and do while Peggy and I traveled the countryside. Other than telling myself that I would try whatever was placed on my plate, I didn't think too much about what I would be eating while I was on my vacation. Well, hasn't this been a busy week? Well, I guess you wouldn't really know since I have been quiet on the blogging front, so let's share a little about what we have been doing. (Warning: This post is filled with descriptions of the many meals I have prepared this week, evidence for future generations that I do know how to cook.) Monday began with a trip to Temple for a Mary Kay meeting with my director, the lovely Georgia. She got to meet Peggy, and Peggy got to learn about my business. The meeting was followed with a tasty lunch at BJ's Brewhouse. Mom accompanied us so the conversation was quite lively. Tuesday was a long day. We left town around 9:15 and made our way through the winding country roads dotted with windmills, goats, cattle and oil pumps. Our destination, Abilene, for some more lunch.
